Surrey Crab Cakes

Surrey Crab Cakes (serves 4)

1 lb. Virginia backfin crabmeat

1 egg

1 cup mayonnaise

1/3 cup cracker meal

1 lemon


Remove any shells from the crabmeat. Beat egg well, add to the mayonnaise and mix well. Add crabmeat and toss lightly. Add a little cracker meal so that mixture can be shaped into cakes. Lightly coat cakes in remaining cracker meal. Broil or saute in a pan with butter until browned. Serve with lemon.
