Williamsburg Crab Imperial (serves 4)


1/4 cup butter

2 tablespoons flour

1 cup milk

2 teaspoons prepared mustard

1/2 teaspoon salt

1/8 - 1/4 teaspoon red pepper

1 lb. Virginia backfin crabmeat

1 cup fresh buttered bread crumbs


Melt butter in a saucepan. Add flour and blend over low heat, stirring constantly for 3-5 minutes. Slowly stir in milk. Continue cooking and stirring until thickened. Blend in mustard, salt and red pepper. Gently fold in crabmeat. Place in ramekins. Sprinkle with bread crumbs and bake in 350 F. oven for about 15 minutes or until browned.
